I’m posting my absolute favorite new Superhero Muffin recipe here, in case anyone asks me what I want for Mother’s Day Brunch (hint, hint!). Since “Superhero Muffins” is the number one searched term on our website and everyone is quarantine baking, we figured you guys would want this recipe. You might recognize the recipe because we shared it a while ago in our email newsletter. We received so many rave reviews and requests to resend the email that we are making it a permanent post here. Also this version has a few updates.

Take the classic Lemon Poppy Seed Muffin to a whole new level by using power-packed chia seeds instead of poppies. Stir in fresh or frozen blueberries and you have a muffin that will impress mom (and everyone in the family!). 

For a fancier look we recommend using almond flour instead of almond meal, which keeps the muffins the color of lemons. Also use yellow or white carrots instead of orange ones so they blend in (if you have picky kids).

Lemon Chia Seed Blueberry Superhero Muffins

For quarantine baking you can feel good about

Makes 12

Ingredients:

  • 2 cups almond flour
  • 1 1/2 cups old-fashioned rolled oats (gluten-free if sensitive)
  • 3 tablespoons chia seeds
  • 1 teaspoon baking soda

  • 1⁄2 teaspoon fine sea salt
  • 3 eggs
  • 1 cup grated yellow or white carrots (about 2 carrots), peeled
  • 1⁄2 cup honey
  • zest of 1 lemon
  • 1/4 cup lemon juice (about 2 lemons)
  • 1/4 cup virgin coconut oil, melted
  • 1 cup blueberries (fresh or frozen)

Directions:

Position a rack in the center of the oven. Preheat the oven to 350°F. Line a 12-cup standard muffin tin with paper muffin cups.

In a large bowl, combine the almond flour, oats, chia seeds, baking soda, and salt.

In a separate bowl, whisk together the eggs, carrot, honey, lemon zest, lemon juice, and melted coconut oil. Add to the dry ingredients, mixing until just combined. Stir in the blueberries.

Spoon the batter into the muffin cups, filling each to the brim. Bake until the tops are golden and a knife inserted in the center of a muffin comes out clean, 25 to 30 minutes.

Can I make this without chia seeds? What would the substitution be, since they absorb so much liquid?

Oh these are good! I used a cup of almond meal and a cup of all purpose flour, and I used 6 tbsp of butter instead of the coconut oil and they are goooood. 201 Calories per muffin that way because I got 16 muffins out of the batch. 10 g of fat (3.4 g saturated fat), 3.3 g fiber, 10.7 g sugar, 24 g total carbs, 5 g protein per muffin.

I am enjoying these so much. Thank you for the tips on melting the coconut oil first. I am tracking my calories, but I’m pretty bad at estimating… Can anyone else estimate the calorie count on a muffin?

Love the flavor of these muffins! I also had the problem that my muffins fell apart easily. Not sure if they just needed to bake longer, but I haven’t had this happen before with the other Superhero Muffin recipes. Any tips?!

These are my favorite flavor and have made them twice already! I added a little cinnamon which never hurts. Added the coconut oil as a liquid and didn’t seem to have any issues with the muffins being too greasy or the flavor being over powering.
Can you tell us the nutritional value and calories?

Utter failure for me; flat and falling apart. Not sure what the problem is but have never had a problem with any of the other superhero recipes.

I used 1/4 cup of melted butter instead of the coconut oil and they were awesome. I’m not a huge fan of coconut and was afraid the flavor would overpower the lemon and blueberry. Really happy with the substitution.

These are by far my favorite superhero muffin flavor! So sweet and light and delicious. Perfect for spring! Would definitely recommend and I will for sure be making them again!

I love the combination of lemon, chia and blueberries, but switching out the butter with coconut oil was a mistake. First of all, the recipe doesn’t state whether the coconut oil can be mixed into the batter in solid state or if we need to melt it and mix it in. Second the taste of coconut completely overpowers the lemon flavor in the muffin which is too bad after you went through the work of grating the zest and getting a 1/4 cup of juice out of lemons. I will try this recipe again with the usual 6 Tbsp melted butter and reduce the honey to 1/4 cup.
