I made this frittata for mother’s day brunch too! Along with the apple carrot superhero muffins! So good!

I love these recipes and have made many of them several times. I really do like the beet molasses superhero muffins but for my last batch I found myself out of beets, but I had plenty of ripe bananas and cooked sweet potatoes— truly a runner’s treat: Banana Sweet Potato Superhero muffins.

Thanks for all the inspiration, both in the kitchen and in running!
