Recipe: Strawberry-Rhubarb Yogurt Popsicles

I’ve never been more excited to say goodbye to winter and hello to spring. We try to get outside as a family no matter the weather, but with two young kids it’s definitely easier now that we need one less layer. I’m a lot more inspired to get outside for a run, walk, or bike ride when the sun is shining. I don’t always have time to squeeze in a run by myself (especially this past year!), so I love staying active while playing with my kids. I call it “play-workouts”, and while this exercise isn’t exactly strenuous, it is surprisingly rejuvenating and gets you to move your body in new ways.

Here are a few of my favorite workouts to do with my kids in tow:

  • Ride bikes to the playground then run around chasing them in the fields and on the slides (I discovered that I can no longer do monkey bars—those are seriously hard!)
  • My 3 year old is really fast on a scooter, I have to jog to keep up with him. He exclaims “Mom lets take a race!” and then he takes off on me. We love going for scooter walks in the neighborhood after dinner.
  • Jump rope or play hopscotch with my 6 year old. I bought us jump ropes in two sizes so we can practice at the same time.
  • Bring bikes to the track and run next to the kids. My daughter likes to keep track of how many laps we finish together. Bring a chalk or marker board!
  • We live in a neighborhood with a big hill. They love it when I pull them in the wagon or push them in the stroller up the hill. They take turns riding and walking beside me. It’s a serious quad burn pushing a kid up a hill.
  • Climbing on boulders and walking across tree logs near the river
  • Playing Frisbee in a big grassy field. I highly recommend Beamo brand flying hoops, as they’re super easy to throw far and a blast to chase down.

It’s amazing how much more fun it is to entertain the kids when you get outside and PLAY. After outside games we are hungry! Our go-to afternoon snack as the weather warms up is homemade popsicles. Check out this recipe for our new favorite flavor. The base is yogurt so this frozen treat is surprisingly high in protein and healthy fat.

Strawberry-Rhubarb Sauce

Makes about 1 1/2 cups

This strawberry-rhubarb sauce is delicious served spooned over plain whole milk or Greek yogurt (for breakfast or snack). Or use the sauce to quickly swirl together a healthy frozen treat (no blender needed!).

  • 3 cups (16 ounces) frozen strawberries, thawed
  • 1 1/2 cups (about 3 stalks) chopped rhubarb, ends discarded
  • 2 tablespoons honey

In a medium saucepan, combine the strawberries, rhubarb, and honey. Simmer uncovered over low heat, stirring occasionally, until the rhubarb breaks down, about 15 minutes. Set aside to cool (sauce will thicken as it cools).


Strawberry-Rhubarb Yogurt Popsicles

Makes 8 popsicles

I recommend using a silicone-popsicle mold so that you can easily push the popsicles out. Because these popsicles are lower in sugar and higher in protein and fat, they’ll stick if you use a hard plastic-style mold.

In a bowl with a pour spout, stir together the yogurt and syrup. Swirl in the strawberry-rhubarb sauce, just enough to barely combine. Divide between 8 popsicle molds, add the sticks, and freeze overnight. I like to take the popsicles out of the freezer about 15 minutes before eating so they can soften just slightly (not necessary on a hot day).
