Interactive Brunch for All Ages:
Make Meme's Crepes for a super fun and interactive brunch where everyone gets to create their own. Go sweet or savory or do both! Pro tip: to keep the crepes warm, place them on a baking sheet in the oven at the lowest setting.
Meme’s Crepes (p. 202)
- Sweet Toppings: Cacao-Hazelnut Spread (p. 271) with sliced bananas, Pumpkin Pear Butter (p. 268), Chai Honey Nut Butter (p. 275), butter, honey, jam, sliced strawberries, or powdered sugar with a squeeze of lemon.
- Savory Toppings: grated cheese, sauteed spinach and mushrooms, scrambled eggs, salami, Easy Oven Bacon (p. 201), Make-Ahead Breakfast Sausage (p. 184), Presto Pesto or Vegan Walnut Pesto (p. 262 and 264)
Serve with Sunrise Juice (p. 243) or Turmeric Tea (p. 257)
Kid-friendly/Easy:
Elyse's kids always go crazy for the Belgian Waffles or Fluffy Pancakes in Rise & Run and when you make the Mix ahead of time this recipe is FAST. Serve them up with your favorite toppings (see crepe suggestions above). For a treat include a side of Easy Oven Bacon.
Fluffy Pancakes/Belgian Waffles (p. 158-162)
- Toppings: butter, maple syrup, peanut butter, fried egg or see above
Easy Oven Bacon (p. 201) or Make-Ahead Breakfast Sausage (p. 184)
Oat Banana Bread with Cauliflower (p. 222)
Serve with Sip Me Hot Cocoa (p. 256)
Another kid-favorite for snacking: Dark Chocolate Banana Superhero Muffins (make them mini!) (p. 90)
Casual/Make-Ahead (so you can get out for a run!):
If you want to sneak in a run before brunch, this menu is for you! Prep the breakfast crumble or oatmeal bake the day before. The muffins and breakfast sausage can be made in advance as well (store in the fridge or freezer). All you need to do is brown the breakfast sausage in a pan, and scramble some eggs!
We love apples this time of year:
Apple-Blueberry Breakfast Crumble (p. 221)
Apple Maple Butter Oatmeal Bake (p. 132)
Apple Cheddar Muffins (p. 81)
For savory cravings try:
Make-Ahead Breakfast Sausage (p. 184) or Tempeh Breakfast Sausage (p. 183)
Perfect Eggs 5 Ways (p. 141)
Always a staple and a great way to use up leftovers: Breakfast Power Bowls (p. 135) OR try a unique breakfast-favorite which you can leave cooking in an Instant Pot while you run/hike/walk: Savory Red Lentil Oatmeal (p. 164)
Fancy, for a crowd:
If you're having company over, this menu is sure to impress! Choose between cinnamon rolls (always a Christmas favorite!) or muffins and round out the brunch with a savory frittata and a salad.
Cinna-Run-Rolls (p. 216) or Pumpkin Streusel Superhero Muffins (p. 96)
Asparagus and Potato Skillet Frittata (p. 205) - to winterize this dish substitute kale, swiss chard, broccoli or Brussels sprouts for the asparagus.
OR for a larger family: Summer Veggie Frittata (p. 191) - for winter, substitute leftover roasted butternut squash or any other roasted winter veg for the tomatoes and zucchini.
Brunch Power Salad (p. 194)
Vanilla Almond Milk (p. 253) with coffee
Breakfast for dinner is also a fun holiday idea! Elyse's family enjoys a breakfast-themed dinner weekly in the winter and the whole family wears their cozy PJs to the table. It's an easy win for busy families.
