Our second cookbook was inspired by the stories and letters from our fans and your requests--for more Superhero Muffins, more recovery smoothies, and more nourishing meals that could be made FAST.
We started working on this book 18 months ago and it turned out more magical than we ever imagined. We developed these recipes while we had a lot going on in our own lives (I was pregnant with my second baby, Shalane was training for the NYC Marathon). This is the food that kept us well nourished so we could achieve our lifelong dreams. Therefore, we're even more in love with the recipes and inspirational stories inside our second cookbook. Last night Shalane and I celebrated our cookbook launch together in Bend, Oregon. There's no better way to celebrate than with a dinner shared with friends and family, of course featuring a few of our favorite recipes from the new book! It was hard for me to decide on the menu for our little dinner party since we have so many delicious favorites in the new book. Check out the menu below!

Here's what we devoured last night. Inspiration for your next dinner party!
Appetizer: Don't Get Beet Hummus with crudite and tortilla chips (I just had to bring back one classic from our first cookbook!)
Drinks: Lemon Gingerade, selection of Oregon IPA's, Rose champagne for the toast!
Main: Thai Quinoa Salad (Shalane fave while training for the NYC Marathon), Roasted Potatoes and Cauliflower*, Marinated and Grilled Drumsticks
*The funny fish-shaped dish that I served this side in was a gift from Shalane on my 25th birthday!
Dessert: Chocolate Peanut Butter Cups (my daughter Lily took charge on making these and she was very proud to serve them)
