How do I get ready for the class?
Once you purchase a recorded class, check your email for the confirmation and link to login. After you login, the class will automatically appear in your library. From here you can easily download the recipes and class notes. The high-res class recording is divided into chapters to give you the chance to catch up, but this course is intended to be followed straight from start to finish. Elyse recommends blocking at least 2 hours on your calendar. We promise it will be worth it! Follow the Before Class prep instructions to get organized before you watch.
Are the classes good for picky eaters? Big families or solo cooks?

What is the difference between live classes and recorded classes?
On this new platform, we are finally able to offer our past live classes as recorded classes. Those who missed joining the live class can purchase the recorded class. And those who joined the live class will be able to access this new library to watch the class again at anytime. The live classes are fun because you can ask questions and see everyone in this community cooking together. Mark your calendars, the next live class is January 21st, 2024.
What if I’m new to cooking? Will I be able to keep up?
Elyse packs a lot into her 90-minute classes and they are fast-paced. The great thing about recorded classes vs live classes is you can pause it at anytime to catch up. She cooks 5 to 6 recipes during the recording and then gives clear written recipes for the other weeknight dishes. You are not expected to cook all the recipes during the class. Select the recipes that work the best for you and for the rest sit back, watch, and learn. Another great strategy is to prep just the components of a dish and finish cooking the recipe during the week.
Are the recipes allergy-friendly?
Yes, the recipes are mostly gluten-free and dairy-free. When Elyse cooks with butter or yogurt she gives substitutions. Her recipes are flexible and it's easy to make substitutions for common food allergies like nuts. Email us if you have specific recipe substitution questions.
Is this class vegetarian-friendly?
We typically make one meat dish in every class, but the rest of the recipes are veggie-loaded and work great for both vegetarians, vegans, and meat lovers. Elyse will teach you how to prep vegetables faster and sneak more seasonal produce into your meals. For the meat dish, she often provides tips on how to sub in black beans or tempeh instead.
